A friend of mine use to make a baked brie for all our girl’s nights and it was absolutely one of my favorite things. She has since moved and took her brie baking skills with her. It’s about time I make my own! So here is my recipe version of a fall baked brie in puff pastry.
Jump to RecipeThere are a lot of food trends swarming social media. I’m not one to jump on all of them but the pumpkin-baked brie that is going around is just too fun not to try. A lot of the recipes call for some kind of pumpkin or apple butter, but I decided to go with some maple nuts instead. Now you can totally leave them out or swap them for some pumpkin butter. But I like the texture contrast with the nuts.
This baked brie recipe is great for any fall gathering because it’s so cute and festive. I mean who doesn’t want to eat baked brie in the shape of a pumpkin? It really doesn’t get cuter than a pumpkin baked brie. And the best part is that it’s really simple for such a pretty presentation. Simply wrap the brie in puff pastry, use 3 pieces of twine to create the pumpkin design, then add an egg wash and bake. While it’s baking I make the maple walnuts. You can add these before you bake the brie but I put the nuts under the baked brie.
Ingredients needed for the Baked Brie
- Puff pastry
- 1 circle of brie
- 1 egg
- walnuts
- sugar
- maple syrup
- coconut sugar or regular sugar
- twine
How to make Baked Brie
- Wrap the brie circle in puffed pastry.
- I cut off the corners so there’s not too much dough.
- Gently tie 3 pieces of twine around to create a pumpkin look. I tie the knots on the side where the puffed pastry meets so there is a ‘clean’ side.
- Brush with 1 whisked egg and bake.
- While thats baking I make the nuts. Melt butter and sugar in a skillet. Add chopped nuts. Roast quickly then remove. Add a little maple syrup and a pinch of salt.
- When the brie has cooled slightly, gently remove the twine. Place the nuts down on a cutting board. (this one is also very cute and a great price) Place the brie on top. I like to add a little sage and a small piece of leftover dough as a stem.

Tips for the Baked Brie
- Cut off the corners so there is not too much puffed pastry.
- Use some of the cut dough to make a little stem.
- Customize how you like. I add maple walnuts under the baked brie but you can also place them on top to the brie inside the dough.

- 1 round brie
- 1/2 cup chopped walnuts
- 1/2 tsp cinnamon
- 2 tbsp coconut sugar or regular sugar
- 1 tbsp butter
- 1 tbsp maple syrup
- 1 egg
