Tacos! Who doesn’t love a taco? These are simple tacos with ground chicken but with a veggie boost with lots of onion and pepper. When you add more vegetables as toppings, like shredded lettuce and avocado, you get these gorgeous, vibrant tacos.
Jump to RecipeGrowing up, taco nights were some of my favorite nights. My mom made a big pan of meat, either ground chicken or ground meat. Lots of yummy toppings like cheese, lettuce, salsa, and guacamole. Easy to make, especially for a large family, and just really good and satisfying. This recipe is reminiscent of that, but I add lots of finely diced onion and bell pepper for more flavor. Plus it adds a nutritional boost, which is always a plus!
Ground chicken, finely diced onion and pepper, crushed tomatoes, and a few seasonings are what you need for the filling. And then whatever toppings you like. I love shredded lettuce, cheese, avocado, and salsa. For tacos, I also love using Siete tortillas or these little Sana street taco tortillas.
Ingredients needed for the Chicken Tacos
- Ground chicken
- Crushed tomatoes
- Two peppers – Red and orange are the best because they are sweeter
- Onion
- Garlic
- Chili powder, cumin, salt & pepper
How to make Chicken Tacos
- Start by dicing the onions and peppers. You can do this by hand but I find the food processor is a lot easier. The onion and peppers need to be finely diced.
- Saute the onion and peppers for about 10 minutes.
- Then you will add the garlic and seasoning.
- Add the ground chicken, break apart, and cook for 10 minutes.
- You will then add the crushed tomato and cook for another 5 minutes, until the chicken is cooked through.
- Prep your toppings and tortillas while the chicken is cooking then when it’s done, you are all set!

Tips for the Chicken Tacos
- Using a food processor is super helpful with the onion and peppers to give it a fine dice quick! Just a few pulses gets it all done.
- If you want to meal prep, you can dice the onion and peppers and store it in the fridge before for a couple days. You can even make the taco meat a few days before.
- The meat is delicious for tacos, but leftovers are great in a salad too!

Ingredients
For the Tacos
- 2 Bell peppers, finely diced Recommend red and orange and using the food processor
- 1 onion, finely diced Recommend using a food processor with the onion
- 3 minced garlic cloves
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp oregano
- 1 lb ground chicken
- 1 cup crushed tomatos
- Salt & pepper
- Tortillas
Suggested Toppings
- Shredded lettuce
- cheese
- diced tomatoes and avocados
- salsa or guacamole
Instructions
- Start by finely dicing bell peppers and onion. I find a food processor is an easy and quick way to do this.
- In a large skillet, heat a little oil and saute the onion and peppers for about 10 minutes until soft.
- Add the garlic and seasoing with 1tsp salt and 1/2 tsp pepper. Cook for a minute.
- Add the chicken and break it apart with a spatula. Cook for 10 minutes.
- Stir in crushed tomatoes. Let the filling cook for about 5 – 10 more minutes, until the chicken is cooked through.
- Prep the toppings and warm the tortillas while the chicken is cooking.
- Assemble tacos and enjoy!
