Seasonal Eating – Fall/Winter

Aaaaand I am back from Mexico!  Tan and relaxed!

Erik and I had  such a great time down south.  We were out in the middle of nowhere, seriously, with hardly anything but the casitas (houses), our friends, beach, and plenty of Pacifico ;-)   It was a quick 5 day vacation but so glorious!

Now that I’m back, I’m getting caught up on work, studying, cleaning, finishing decorating (!!) and getting ready for Erik’s big work holiday party tomorrow night.  I am beyond excited, I love getting dolled up!  And his work goes all out, it’s a fabulous event.  Oh, and getting to party at the Montage Beverly Hills, doesn’t hurt either.  I’ll hopefully have some pretty pics of the place to post Monday :-)

OK, so back to business.  I normally keep things pretty clean in the kitchen when cooking and preparing foods.  Just lots of whole grains, vegetables, and fruits.  It’s even more important to try to keep the diet clean in this season.  Not only will your body and immune system stay stronger (fight off sickness, boom!), you will feel less guilty for occasionally indulging.

Let’s face it, we all like to enjoy the good times during the holidays, and there is never a shortage of good foods, treats, and drinks around!

There is enough stress during the holidays without the need to worry about your waistline.  So load up on the goods, and allow yourself to enjoy some indulgences without guilt ;-)

Which brings me to seasonal eating: Fall/Winter:

Part of staying natural with foods is to eat seasonal.  I posted a while back about why buying seasonal vegetables and fruits is beneficial.  On top of those reasons, the earth is telling us what we should be eating in the current season to keep us healthy and strong.  We grow lots a hydrating and cooling foods in summer months, correct?  Our bodies need those foods in the hot months, but you don’t want you body cooling down lots in the winter months.  You would be more susceptible to illness if you stayed eating mostly just the fruits and veggies you eat in summer.  During the colder winter months, your body wants denser, heavier foods.  It’s important to incorporate plenty of high protein, high good fat, and oils during these months.  Root vegetables (potatoes, carrots, beets, yams) are very satisfying in winter.  They are more dense, and because of how they are grown (root), will keep us feeling more grounded, warm, cozy…just what our body is craving!!

Here is a good list of fall and winter foods.  Try adding these to your grocery list and keep an eye out for these at the market:

  • Squash

  • Apples

  • Beets

  • Brussel sprouts

  • Cranberries

  • Mushrooms

  • Figs

  • Sweet potatoes

  • Swiss chard

  • Figs

  • Grapefruit

  • Kale

  • Leeks

  • Lemons

  • Radishes

  • Turnips

Snaps! A true fall weekend

Happy Monday ya’ll!!!

It’s so fall here now and I am loving life!!  Even Monday can’t get me down, although I’m not much of a Monday hater.  It’s a fresh start, new day, and I thoroughly enjoy my job ;-) .  This past weekend, since we didn’t have anything solid on the books, I decided to make Saturday a day of cheesy fall activities.    Since LA doesn’t scream fall what with its lack of color changing leaves, not-so-cold weather etc., we decided to take the fall party out to Glen Oak.  After making the hour and a half drive, the day was filled with all things apples!!  We visited an apple orchard (there were tons to choose from), picked our own bag of apples, pressed our own cider, picked a pumpkin, ate some pie, shopped, and had a truly beautiful day.  I highly recommend if you have the time and are in the So Cal area, to plan a day trip out there.

Baked Pumpkin Doughnut Holes

When I was younger, my dad would go out and bring home fresh doughnuts almost every Saturday.  It was the best way to start the weekend.  As much as I loved my Saturday morning doughnuts as a kid, my kind of grown up self is thankful those bad boys are a thing of the past.

I have been seeing all kinds of yummy looking doughnuts pop up on blogs and Pinterest, so I finally decided to give it a go.  There is no frying here though, I made sure to keep them on the healthier side with baking.  Oh, and since they were baked in a mini muffin tin, you shouldn’t feel too guilty about popping a few in your mouth for breakfast this weekend huh?  Suuure ;-)

Anyway, a little side note:  I used applesauce (needed to use some up) which made them more muffin like.  Feel free to sub in coconut oil instead if you’d like…

Baked Pumpkin Doughnut Holes – Vegan

In one small bowl, whisk together:

  • 1 3/4 all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice <I made my own following Shelly’s recipe>

In a larger bowl, combine:

  • 1/3 cup applesauce
  • 1/3 cup organic raw brown sugar
  • 1 flax egg <1 tbsp ground flax + 3 tbsp warm water, let set for a few minutes>
  • 3/4 cup organic pumpkin puree
  • 1/2 cup almond milk

Pre-heat oven to 350.  Add flour mixture to liquid pumpkin bowl, and mix until just combined.  Spoon dough into greased mini muffin tin.  When oven is warmed, bake for about 18 minutes < +/- >.

When doughnuts are almost done baking, melt a few tablespoons of vegan buttery spread <Earth Balance> and a couple of tablespoons of coconut oil.  Remove from heat and pour in small bowl.  In another small bowl mix about 1/2 cup raw organic sugar and 1/4 cup cinnamon.

When doughnuts are done baking, remove and cool for several minutes, but not completely.  while still warm, take one by one and dip first in “butter” then roll in sugar.

Yes, your hands will get messy.  You will want to lick that buttery, sugary mess off your fingers, but keep going.  Roll all those bad boys (maybe pop a couple in your mouth) and enjoy!!

Helloooooo September!

Fall is so close, I can almost smell it.  I, like almost every other person I know, am SO excited.  Hello boots, sweaters, scarves, pumpkin everything, holidays, football, yeah, I think  you get it.

Even though I am in love with fall, it is a little bitter-sweet.  It also means saying goodbye to summer :-( .  Knowing we would soon be parting ways for a while, I have been enjoying this last bit of long days, warm nights, and summer produce.

The week was busy meeting for baby shower planning for my beautiful cousin (thank you pinterest for doing most of the work) and a couple of dinners out with friends making summer visits.  We kept the weekend pretty mellow since the summer has been so crazy busy.  I did manage to have some friends over for dinner, hit up the International Orange Street Fair, and get some bronzing time in.  While at the Street Fair, we stopped by the Bruery. They have an awesome, unique, and award-winning selection of beers (Even Erik’s favorite IPA from his home Salt Lake City) and delicious food.  They have the cutest little patio to chill out on, and are situated right in the middle of Old Town Orange.  They also have a location close to Anaheim Stadium.  Thinking we might have to stop by on our way to our next Angel’s Game!
