A good veggie bowl, while basic, is one of my favorite things to eat. I make some variation of this several times a week. Either breakfast, lunch, or dinner. It’s something that’s both satisfying and nutritious. It’s also a fantastic way to use up any veggies you have on hand. It’s a great way to avoid wasting food. Less food waste is a win!
This is less of a recipe and more of how I assemble a bowl.
- I start with about a 1/2 cup of grains. I usually make a big batch to start the week and use them for different meals. Depending on what we have planned, we might make white rice, brown rice, and or quinoa. You don’t have to use grains, but it adds good substance and fiber.
- I will then quickly saute some veggies. Here I used 1/4 white onion, zucchini, mushrooms, and spinach. You can use such a wide variety of veggies. I like heartier ones like zucchini, broccoli, cauliflower or potatoes mixed with some greens.
- I’ll usually stir in about 1/3 can of beans. I’m really loving white beans right now. They are creamy and add such delicious flavor and texture to the bowl. Any beans will do though and again, great fiber and protein for the bowl.
- Now season! Vegetables are great, but you have to season them right. I find salt, pepper, and your favorite all purpose seasoning are the best for a simple bowl. If you have some fresh herbs to sprinkle on top too that’s always good. Season as you go, adding more until it’s where you want. Don’t wait until the end.
