Sometimes you just need a simple, grounding, healing meal. Dahl is that for me. Well, dahl or curry because a good curry is just my favorite. I always keep a jar of lentils on hand. Combined with just a few simple ingredients and the right spices, you’ve got a bowl of deliciousness.
As I near the end of my second trimester, I have a craving for healing and grounding foods. I’m watching this bump really grow, realizing my belly is this little man’s home. I’m nourishing it and trying to feel as connected to my body as I can. Food obviously plays such an important role, which is why I love things like dahl. Real food and cooked with love.
1 white onion, diced
2 minced garlic cloves
2 tsp ground ginger
2 tsp cumin
1 tsp mustard powder
2 tsp curry powder1 tsp garam masala
1tbsp tomato paste
1 cup red lentils, rinsed
1 cup diced tomatoes, fresh (optional but suggested)
1 can diced tomatoes – I like fire roasted for flavor
1 can full fat coconut milk
cilantro and yogurt (dairy free optional) for topping
In a large pot, heat a little oil or ghee over medium heat.Add onion and cook for a few minutes.
Add garlic and all spices. Give it a good stir and cook for a couple minutes, until fragrant.
Add in tomato paste, lentils, tomatoes, and coconut milk. Give it another good stir, then simmer for 15-20 minutes, until lentils are cooked and tender.
Serve with fresh herbs, like cilantro, and a dollop of yogurt.
