Baking potatoes as fries with a little salt & pepper is certainly nothing revolutionary. Yet, sometimes the easiest recipes are worth posting to remind people how easy delicious real food is. Cut, season, bake. It’s that simple. My husband requests these weekly, so I make a big batch early in the week and just reheat later on. I like them as a snack dipped in hummus or vegan cheese sauce while my husband likes them as a side to dinner or on top of a salad for more substance. With potatoes, you really can’t go wrong! Plus, yukon golds are a good source of energy from the carbohydrates. Plus they are high in vitamin C, providing antioxidants and helping fight free radicals (what contributes to disease).
